Ingredients

The ingredients are:
  • 20 Nilla Wafers, finely crushed (about 3/4 cup)
  • 1/2 cup plus 2 tablespoons all-purpose flour, divided
  • 1/4 cup packed brown sugar
  • 1/4 cup cold butter, cut into small cubes
  • 1 (8 ounce) package cream cheese, softened
  • 1 1/4 cups sugar
  • 2 large eggs
  • Yellow food coloring (optional)
  • 2 tablespoons lemon zest
  • 1/4 cup fresh lemon juice (no bottled please)
  • 1/4 tsp baking powder
  • Powdered sugar

How to Make

  • Step 1: Preheat oven to 350 degrees F then grease an 8-inch square baking pan.

  • Step 2: In a bowl combine the wafer crumbs with 1/2 cup flour and brown sugar; add in cold butter then mix until mixture resembles coarse crumbs.

  • Step 3: Press onto bottom of prepared pan, then bake 10-12 minutes

  • Step 4: In a medium bowl beat cream cheese with 1-1/4 cups of sugar using an electric mixer until well blended.

  • Step 5: Add eggs, food coloring, if using, and 2 tablespoons of flour; mix well, then mix in 2 tablespoons of lemon zest, 1/4 cup lemon juice and baking powder; pour over crust.

  • Step 6: Bake for 25 to 28 minutes or until center is set; cool completely.

  • Step 7: Refrigerate for at least 4 hours or more.

  • Step 8: Sprinkle with powdered sugar before serving.
