Ingredients

The ingredients are:
  • 1 pound scallops, (8 large, in the shell)
  • 1/2 cup fish stock
  • 1 small (4 ounce) yellow onion (quartered)
  • Salt and pepper
  • 1 bay leaf
  • SAUCE
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1/2 cup milk
  • 2 tablespoons cream
  • 2 ounces cheddar cheese (grated, divided)

How to Make

  • Step 1: Preheat oven to 350°F.

  • Step 2: Remove scallops from their shells and clean, but do not remove the yellow tip. Reserve shells.

  • Step 3: Place scallops in an oven-proof dish with the stock, onion, seasoning and bay leaf.

  • Step 4: Cover and bake for about ten minutes.

  • Step 5: Lift out the scallops and replace them in their shells.

  • Step 6: Reserve pan juices for sauce.

  • Step 7: Melt butter.

  • Step 8: Stir in flour and cook for one minute.

  • Step 9: Remove from heat.

  • Step 10: Add milk and reserved pan juices.

  • Step 11: Return to heat and bring to a boil.

  • Step 12: Beat in cream and half of the grated cheese.

  • Step 13: Pour a little of the sauce into each scallop shell, sprinkle with the rest of the grated cheese, and brown under the broiler.
