Step 1: Preheat oven to 350 degrees F, then grease an 8 x 8-inch baking pan (an 11 x 7-inch pan will work also).
Step 2: In a saucepan melt butter (can melt in microwave) remove from heat and add brown sugar stirring until the brown sugar is completely dissolved, then cool slightly.
Step 3: Whisk in eggs, coconut extract and vanilla until well blended.
Step 4: In a small bowl combine the flour with baking powder; mix into the wet batter until thoroughly combined.
Step 5: Mix in the coconut, transfer to baking dish, then bake for about 25 minutes.
Step 6: Slice into desired size bars
