Ingredients

The ingredients are:
  • 1 cup oats
  • 1 1/4 cups water (boiling)
  • 1 teaspoon apple cider vinegar
  • 1/2 cup shortening
  • 1 cup granulated sugar (white)
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • TOPPING
  • 1/2 cup butter (1 stick)
  • 3 tablespoons peanut butter (creamy)
  • 1 cup brown sugar
  • 6 ounces evaporated milk (half 12 oz can)
  • 2 teaspoons vanilla extract
  • 8 ounces flaked coconut

How to Make

  • Step 1: Mix oats and boiling water, allow to stand 20 minutes.

  • Step 2: Cream together shortening, sugar, eggs, vanilla vinegar, add cooled oats with dry ingredients.

  • Step 3: Bake at 350 degrees for 25 minutes, or until butter knife inserted in the middle comes out clean.

  • FOR THE TOPPING

  • Step 4: Melt the butter until its bubbly, add the brown sugar and bring to a boil, then slowly add in the milk and bring back to a boil. Remove from the heat, mix in the vanilla, peanut butter and the coconut.

  • Step 5: Frost the warm cake. Put back in the oven for 5 minutes.
