The ingredients are:
  • 1 pound fresh blackberries
  • 4 whole eggs
  • 2 egg yolks
  • 1/4 cup all-purpose flour
  • 1/2 cup caster sugar
  • Salt, 1 pinch
  • 2 cups milk
  • 2 to 3 tablespoons brandy
  • Powdered sugar

How to Make

  • Step 1: Preheat oven to 375°F.

  • Step 2: Arrange berries in the bottom of a greased 10" baking dish.

  • Step 3: Combine eggs, egg yolks, flour, sugar, salt and milk in a blender or food processor.

  • Step 4: Process until well mixed.

  • Step 5: Pour batter over berries.

  • Step 6: Place dish on a baking sheet.

  • Step 7: Bake for 30-40 minutes, or until puffed and golden.

  • Step 8: Remove from oven and cool; batter may sink a little.

  • Step 9: Just before serving, spoon brandy over top and dust with powdered sugar.
