Step 1: Mix dry ingredients in bowl.
Step 2: Beat egg and buttermilk together and stir well into cornmeal mix.
Step 3: Heat bacon drippings in iron skillet and pour in batter.add bacon to batter here
Step 4: Cover and ‘bake’ over low heat 10 minutes.
Step 5: Invert on cover, slide back into skillet and ‘bake’ ten more minutes or until center is done.
Step 6: Serve in wedges-hot.
