The ingredients are:
  • 1 (3 pound) boneless beef chuck roast (diced into small pieces)
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons oil (vegetable oil)
  • 2 whole (16 ounces) yellow onions, diced
  • 1 tablespoon garlic, minced
  • 2 tablespoons chili powder (it called for 1/4 cup add more if you want)
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 can (14 1/2 ounce) diced tomatoes
  • 1 can (15 ounce) corn kernels
  • 2 cups yellow squash, coarsely chopped
  • 2 cups bell peppers, coarsely chopped (red and green, cored, seeded, and cut into bite-size pieces)
  • 1 can (15 ounce) pinto beans (drained)
  • 3 tablespoons fresh cilantro, coarsely chopped (for garnish)

How to Make

  • Step 1: Brown meat cubes and onions and garlic in oil, then throw everything in crock pot except squash and peppers. Cook for 5 hours at the last add squash and peppers cook until they are just done.
