Ingredients

The ingredients are:
  • 4 tablespoons butter
  • 1/2 cup chopped yellow onion
  • 1/2 cup finely chopped celery
  • 4 tablespoons all-purpose flour
  • 1 teaspoon Worcestershire sauce
  • Cayenne (1 dash)
  • 4 cups milk (hot)
  • 1 cup diced potato
  • 3/4 cup diced carrot
  • 2/3 cup green string beans (broken into 1-inch pieces)
  • 1 1/4 cups shredded gouda cheese
  • Salt
  • Pepper
  • 1/2 cup parsley, finely chopped

How to Make

  • Step 1: Melt butter in a heavy-bottomed saucepan.

  • Step 2: Add the onion and celery and cook until they are softened but not browned, 4-5 minutes.

  • Step 3: Sprinkle in flour and stir well.

  • Step 4: Add Worcestershire sauce and cayenne.

  • Step 5: Stir in 1/2 cup hot milk and blend well.

  • Step 6: Repeat.

  • Step 7: Add remaining milk 1 cup at a time, stirring well.

  • Step 8: Add potatoes, carrots and beans.

  • Step 9: Reduce heat to medium-low and cook until vegetables are cooked and soup has thickened, 15-20 minutes, stirring occasionally.

  • Step 10: Reduce heat to low and stir in cheese, stirring well until cheese is melted.

  • Step 11: Season with salt and pepper.

  • Step 12: Stir in parsley just before serving.
