Ingredients

  • 1 tablespoon olive oil
  • 1 (8 ounce) yellow onion, minced
  • 3 red (1 1/4 pounds) bell peppers, chopped
  • 3 whole (1 1/4 pound) pears (seeded, chopped)
  • 2 whole (6 ounces) carrots, chopped
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 tablespoon yoghurt
  • 6 c vegetable broth

How to Make

  • Step 1: Heat oil, add carrots, onion, and bell pepper.

  • Step 2: Saute 15 minutes until soft.

  • Step 3: Add broth.

  • Step 4: Add pears.

  • Step 5: Add spices.

  • Step 6: Cook 45 minutes.

  • Step 7: It says to use blender im just going to mash.

  • Step 8: Dollop with some greek yoghurt as you serve
