Ingredients

The ingredients are:
  • 4 egg yolks
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 2 tablespoons salad oil
  • 6 tablespoons butter (melted and cooled slightly)
  • 1/4 pound cheese (shredded, Danish Tybo preferred, mild cheddar may be substituted)
  • 2 packages (10 ounce) frozen spinach (cooked according to package directions and drained well)
  • 3 pounds sole fish (eight 6 oz fillets, sole, plaice or flounder)
  • 1 lemon (juice of)
  • Salt
  • Pepper

How to Make

  • Step 1: Preheat oven to 400°F

  • Step 2: Beat egg yolks thoroughly with salt and paprika.

  • Step 3: Beat in oil a little at a time.

  • Step 4: Beat in butter a little at a time.

  • Step 5: Stir in 3/4 of the cheese.

  • Step 6: Combine with spinach.

  • Step 7: Pour one third of spinach mixture into a greased shallow 9" square baking dish.

  • Step 8: Season both sides of fish with lemon juice, salt and pepper.

  • Step 9: Roll fish up and place rolls, loose side down, in pan on top of spinach.

  • Step 10: Top with remaining spinach mixture.

  • Step 11: Sprinkle with remaining cheese.

  • Step 12: Bake for 20 minutes.
