Ingredients

The ingredients are:
  • 1 pound boneless skinless chicken breast halves (4 breasts, diced)
  • 2 tablespoons soy sauce
  • 1 can (21 ounce) pineapple tidbits (with juice)
  • 2 tablespoons oil
  • 1 red bell pepper, diced
  • 3 ounces broccoli (1/2 cup)
  • 1 orange (6 ounce) bell pepper, diced
  • 4 whole mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons fresh minced gingerroot
  • 2 teaspoons black bean sauce
  • 1 teaspoon crushed red pepper, to taste
  • 2 teaspoon cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper to taste

How to Make

  • Step 1: Combine the chicken, soy sauce, and pineapple juice juice in a bowl.

  • Step 2: Allow chicken to marinate for 20 minutes.

  • Step 3: Remove the chicken from the marinade;

  • Step 4: Strain the marinade in a colander,

  • Step 5: Reserving the juice.

  • Step 6: Heat the oil in a large skillet over medium heat.

  • Step 7: Add the red bell pepper, orange bell pepper, mushrooms, garlic, and ginger.

  • Step 8: Cook and stir the vegetable mixture until the garlic is fragrant and the peppers begin to soften.

  • Step 9: Stir in the chicken and cook until the juices from the chicken run clear,

  • Step 10: About 15 minutes.

  • Step 11: Add broccoli

  • Step 12: Pour in the reserved chicken marinade mixed with cornstarch , black bean sauce, and crushed red pepper;

  • Step 13: Season with salt and pepper;

  • Step 14: Simmer 5 minutes.
