Ingredients

  • 1 pound boneless shin (500 grams gravy beef)
  • 1/2 teaspoon thyme
  • 1/2 teaspoon Angostura bitters
  • Seasonings to taste
  • 2 whole (16 ounces) yellow onions, chopped
  • 1/2 cup red wine
  • 1/2 cup beef stock

How to Make

  • Step 1: Remove the fat and sinew from the meat and roughly chop. Combine with other ingredients in a saucepan.

  • Step 2: Cover and simmer for 2-3 hours or until the meat is tender, and allow to cool.

  • Step 3: When cooled puree in a food processor and transfer to s serving bowl.

  • Step 4: Refrigerate and serve.
