Ingredients

The ingredients are:
  • 8 ounces dry rice (1 cup dry, long grain)
  • 1 cup chopped celery
  • 1 yellow onion (medium-large onion, diced)
  • 3 tablespoons butter
  • 2 cups water
  • Dry chicken noodle soup mix (two 2 to 2 1/2 ounces each, dry)
  • 1/4 to 1/2 teaspoon salt (to taste)
  • 2 tablespoons minced fresh parsley
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 1/4 teaspoon pepper
  • 1 bay leaf
  • 1 tablespoon chopped pimentos (optional)

How to Make

  • Step 1: In a large skillet, cook the rice, celery and onion in butter, stirring constantly, until rice is browned.

  • Step 2: Stir in the next eight ingredients; bring to a boil. Taste water for seasoning. Adjust salt and black pepper, if necessary. Reduce heat; cover and simmer for 10 minutes. Remove the bay leaf.

  • Step 3: Stir in the pimentos if desired. Remove from heat and let stand for 10 minutes.
