  • 2 cups granulated sugar
  • 1/2 cup fresh lime juice
  • Powdered sugar, for dusting

How to Make

  • Step 1: Preheat oven to 350F. Lightly grease a 13x9x2 inch baking dish.

  • Step 2: In a food processor, fitted with a metal blade, combine 2 cups flour, powdered sugar, and 1/2 teaspoon baking powder. Add butter and pulse until mixture resembles coarse crumbs.

  • Step 3: Press mixture into prepared baking dish. Bake 20 to 25 minutes, or until golden browned.

  • Step 4: Meanwhile, in a medium bowl, combine eggs, granulated sugar, lime juice, 1/4 cup flour, and 1/2 teaspoon baking powder.

  • Step 5: Pour mixture over hot crust. Bake 22 to 25 minutes or until lightly browned.

  • Step 6: Remove from oven and cool slightly. Dust with powdered sugar and cut into 36 pieces.
