Ingredients

The ingredients are:
  • 1/2 pound boneless skinless chicken breasts (2 large chicken breasts, or more, seasoned with salt & pepper, then skillet-cooked and then cubed or just use a cooked rotisserie chicken, whatever you prefer)
  • 2 to 3 tablespoons barbecue sauce (your favorite, for coating the cooked chicken)
  • FOR PIZZA
  • 1 (12-inch) pizza dough (I partially pre-baked mine for about 10 minutes)
  • 1/4 cup barbecue sauce (your favorite)
  • 1/3 cup shredded Gouda cheese (smoked)
  • 1 cup shredded mozzarella cheese
  • 1/2 small (4 ounce) red-onion, sliced
  • 1 (6 ounce) bell pepper, sliced (green or red, seeds removed)
  • 1/4 cup Parmesan cheese, shredded

How to Make

  • Step 1: Place a pizza stone in the center of the oven and preheat to 500 degrees for one hour before cooking pizza.

  • Step 2: Use a large spoon to spread 1/4 cup BBQ sauce evenly over the surface of the prepared dough within the rim. Sprinkle smoked Gouda cheese over the sauce. Cover with 1 cup shredded mozzarella.

  • Step 3: Distribute half the chicken pieces evenly over the cheese (approximately 18 pieces). Place red onion and bell pepper slices over the surface, then remaining mozzarella over the top, then lastly, sprinkle Parmesan cheese over top.

  • Step 4: Transfer the pizza to the oven; bake until the crust is crisp and golden and the cheese at the center is bubbly (about 10 minutes). When the pizza is cooked, carefully remove it from the oven; Slice and serve.
