The ingredients are:
  • 2 pounds tomatoes (cored, halved and seeded)
  • 8 ounces crumbled blue cheese (1 cup, at room temperature (aged Gorgonzola preferred)
  • 4 ounces crumbled feta cheese (1/2 cup)
  • 1 to 3 tablespoons vodka (or white rum - optional)
  • 1/3 cup olive oil (extra-virgin)
  • 2 tablespoons chopped fresh mint

How to Make

  • Step 1: Preheat oven to 375°F.

  • Step 2: Arrange tomatoes on a baking sheet in a single layer, cut side up.

  • Step 3: Bake for 1 hour, until they shrink to half their original size.

  • Step 4: Let cool, then puree.

  • Step 5: Just before serving, mash cheeses together with a fork.

  • Step 6: Stir in tomatoes; mixture should be somewhat coarse.

  • Step 7: Add vodka or rum.

  • Step 8: Drizzle with oil and stir to mix; oil should not be completely incorporated.

  • Step 9: Place in a serving bowl and sprinkle with mint.
