Ingredients

The ingredients are:
  • 1 medium Persian (5 pounds) melon (or 2 small cantaloupes)
  • 1/2 teaspoon salt
  • 2 medium (1/2 pound) peaches (ripe but still firm, peeled, halved and sliced)
  • 1/2 cup granulated sugar
  • 3 tablespoons lemon juice
  • 2 tablespoons rose water
  • Ice (optional)

How to Make

  • Step 1: Cut melon in half and remove seeds and stringy pulp.

  • Step 2: Using melon baller or small spoon, scoop out as many melon balls as possible.

  • Step 3: Put melon balls in deep bowl.

  • Step 4: Pour any juice from shells over melon balls, and discard shells.

  • Step 5: Toss with salt.

  • Step 6: Add peaches, sugar, lemon juice and rose water.

  • Step 7: Toss gently to combine.

  • Step 8: Cover tightly and refrigerate at least 2 hours, or until thoroughly chilled.

  • Step 9: Serve in individual dishes.

  • Step 10: Top with crushed or shaved ice if desired.
