Step 1: Dice nectarines (I will use peaches) into 1/2 inch chunks discarding pits, to measure about 8 cups.
Step 2: Chop tomatoes into 1/2 inch chunks to measure about 8 cups.
Step 3: Combine nectarines, tomatoes and all remaining ingredients in a large kettle and bring to a boil.
Step 4: Boil gently for 2-2 1/2 hours or until of relish consistency.
Step 5: Ladle into hot sterilized canning jars, leaving 1/2 inch of head space and adjust lids and rings.
Step 6: Process 15 minutes in a boiling water bath.
Step 7: Makes about 3 quarts or 6 pints.
