Ingredients

The ingredients are:
  • 12 medium nectarines (4 pounds)
  • 8 medium ripe tomatoes (3 pounds)
  • 6 cups sugar
  • 2 1/2 cups while distilled vinegar
  • 2 teaspoons salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon black pepper
  • 2 1/2 cups dark seedless raisins

How to Make

  • Step 1: Dice nectarines (I will use peaches) into 1/2 inch chunks discarding pits, to measure about 8 cups.

  • Step 2: Chop tomatoes into 1/2 inch chunks to measure about 8 cups.

  • Step 3: Combine nectarines, tomatoes and all remaining ingredients in a large kettle and bring to a boil.

  • Step 4: Boil gently for 2-2 1/2 hours or until of relish consistency.

  • Step 5: Ladle into hot sterilized canning jars, leaving 1/2 inch of head space and adjust lids and rings.

  • Step 6: Process 15 minutes in a boiling water bath.

  • Step 7: Makes about 3 quarts or 6 pints.
