  • The following recipe serves 10-12 people.

Ingredients

The ingredients are:
  • 400 grams dry macaroni pasta (4 cups, dry elbow)
  • 1 to 1 1/4 pounds red bell peppers (3 whole roasted red peppers, chopped, can make either buy store-bought or make your own, pimentos can also be substituted)
  • 1/2 to 1 cup diced pickles (sweet and spicy pickle, I use Wickles brand which I find to be superior to others)
  • 3/4 cup black olives, sliced
  • 3/4 cup peppadew peppers, sliced in half (use either hot or mild, I like using hot for an extra zip)
  • 6 to 8 green onions (whole, sliced, use the white and dark green parts)
  • 1/2 cup mayonnaise (Hellman's brand preferred)
  • 1 to 2 tablespoon red wine vinegar (or distilled vinegar)
  • 3 teaspoons granulated sugar
  • 1/4 teaspoon salt (to taste)
  • Fresh ground black pepper (plenty)
  • 1/4 cup milk (more if needed)
  • Pickle juice, to taste (splash. Refer to Note regarding pickle juice)
  • Peppadew juice, to taste (splash. Refer to Note regarding pepadew juice)

How to Make

  • Step 1: Cook the macaroni in lightly salted water according to package directions. Drain and rinse under cold water to cool. Set aside.

  • Step 2: Mix together mayo, vinegar, sugar, salt, and pepper. Splash in enough milk to make it pourable. Splash in enough pickle and peppadew juice for extra delicious flavor. Taste and adjust seasonings as needed. Set aside. *(NOTE: I normally add more than just a splash for both the pickle and peppadew juices. Believe me, it is essential and adds so much flavor)*

  • Step 3: Place cooled macaroni in a large bowl and pour 3/4 of the dressing. Toss and add more dressing if you'd like. (Dressing will seem a little thin, but it will thicken up as salad chills.)

  • Step 4: Stir in olives, roasted red peppers (or pimentos), pickles, and green onions. Add more of any ingredient if you'd like more stuff going on! At the end, splash in a little more pickle juice and stir.

  • Step 5: Chill for at least 2 hours before serving. Sprinkle with sliced green onion to serve!
