Ingredients

The ingredients are:
  • 2 red apples (large apples, cut into 3/4-inch chunks I use Gala apples)
  • 1/2 cup dark raisins
  • 1/2 cup celery (sliced into 3/4-inch chunks)
  • 1/2 cup cabbage (red cabbage, roughly chopped
  • 1/2 cup carrots (peeled and cut on the bias into elongated nickles)
  • 1/2 cup walnut halves (English walnuts or other large nuts)
  • 1 cup Romaine lettuce, roughly chopped
  • 2/3 cup cauliflower florets (cut or broken into 3/4 inch chunks)
  • 1 tablespoon fresh lemon juice, strained
  • 1/8 teaspoon Kosher salt
  • 1/2 cup miniature marshmallows (optional for kids)
  • 1/2 cup mayonnaise
  • 1/4 cup honey (I use Tupelo honey)
  • 1/8 cup seasoned rice vinegar (or cider vinegar)
  • 1/3 teaspoon yellow mustard

How to Make

  • Step 1: Make the dressing by blending the mayonnaise, honey, vinegar, and mustard with a fork. Refrigerate.

  • Step 2: In a large non-aluminum mixing bowl, toss the apple pieces with the lemon juice. Add all remaining ingredients (except dressing) and toss lightly. Add dressing and toss lightly a final time.

  • Step 3: Refrigerate, covered, for one hour prior to serving.
