Ingredients

The ingredients are:
  • 6 cups grated (24 ounces) zucchini (squeeze to remove excess water)
  • 5 cups granulated sugar
  • 1/2 cup lemon juice
  • 1 can (21 ounce) crushed pineapple (juice and all)
  • 1 package (6 ounce) Jell-O gelatin (strawberry or orange or blackberry)

How to Make

  • Step 1: Boil the zucchini and sugar for 20 minutes.

  • Step 2: Add lemon juice and crushed pineapple. Boil for 5 minutes.

  • Step 3: Add gelatin and stir until dissolved.

  • Step 4: Remove from heat, pour into hot jars and seal.

  • Step 5: Process in water bath for 5 minutes.

  • Step 6: Makes 6 jelly jars (half pints?).
