The ingredients are:
  • 4 pounds pork loin chops (4 husker chops, 1/2-inch thick)
  • SAUCE
  • 1 tablespoon butter
  • 1 cup chicken stock
  • 1/4 cup prepared mustard (grainy)
  • 1/2 cup heavy cream
  • STUFFING
  • 4 slices (4 ounces) bacon, chopped
  • 2 shallots, minced
  • 2 cups mustard greens, cut into long strips
  • 1/2 cup corn bread stuffing (Pepperidge Farm)

How to Make

  • FOR THE STUFFING

  • Step 1: Cook the bacon. Remove, add shallots add greens. Cook until wilted.

  • Step 2: Add stuffing.

  • Step 3: Cut into side of chop, stuff the stuffing.

  • Step 4: Place the stuffed chops in baking dish.

  • Step 5: Mix the stock with butter and mustard; pour over chops.

  • Step 6: Wrap in tin foil.

  • Step 7: Bake in oven for 40 minutes.

  • Step 8: The last 10 minutes, pour cream over cream. Bake uncovered.
