  • 1 1/2 cups water (boiling)
  • 1 1/2 cups milk
  • 2 tablespoons butter, melted
  • 5 large eggs (beaten well)
  • 8 ounces frozen corn (3/4 cup)
  • 1 teaspoon baking powder

How to Make

  • Step 1: Preheat oven to 375 degrees F.

  • Step 2: In bowl mix, combine the cornmeal, salt, and sugar.

  • Step 3: Add the boiling water and butter and corn into the bowl and mix for about 5 minutes.

  • Step 4: Add milk and beaten eggs and mix for another 5 minutes; allow mixture to cool for about 5 minutes.

  • Step 5: Add the baking powder and mix until well incorporated.

  • Step 6: Pour mixture into a buttered skillet or 2-quart casserole and bake for 30 to 45 minute an the center has set.

  • Step 7: Serve immediately.
