Ingredients

The ingredients are:
  • 14 ounces zucchini (2 zucchini, coarsely grated)
  • 3 ounce carrot (1 carrot, peeled coarsely grated)
  • 1 small red capsicum (seeded finely chopped)
  • 2 spring onions (thinly sliced)
  • 175 grams bacon (short cut bacon, finely chopped)
  • 120 grams cheddar cheese (1 cup, coarsely grated)
  • 150 grams self-rising flour (1 cup)
  • 4 large eggs (lightly whisked)
  • 60 ml milk (1/4 cup)
  • 2 tablespoons olive oil

How to Make

  • Step 1: Preheat oven to 180C.

  • Step 2: Grease a 20cm x 30cm lamington pan and line the base and 2 long sides with baking paper.

  • Step 3: Place the zucchini, carrot, capsicum, spring onion, bacon, cheese and flour in a large bowl and stir to combine.

  • Step 4: Add the egg, milk and oil and stir to combine and season with salt and pepper.

  • Step 5: Spoon the mixture into the prepared pan and smooth the surface.

  • Step 6: Bake for 40 minutes or until firm to the touch.

  • Step 7: Set aside to cool.

  • Step 8: Cut into squares.

  • Step 9: For a light meal serve with mixed salad leaves or put a slice in a lunch box.
