Step 1: Preheat oven to 180C.
Step 2: Grease a 20cm x 30cm lamington pan and line the base and 2 long sides with baking paper.
Step 3: Place the zucchini, carrot, capsicum, spring onion, bacon, cheese and flour in a large bowl and stir to combine.
Step 4: Add the egg, milk and oil and stir to combine and season with salt and pepper.
Step 5: Spoon the mixture into the prepared pan and smooth the surface.
Step 6: Bake for 40 minutes or until firm to the touch.
Step 7: Set aside to cool.
Step 8: Cut into squares.
Step 9: For a light meal serve with mixed salad leaves or put a slice in a lunch box.
