Ingredients

The ingredients are:
  • 2 cups corn chips (Frito)
  • 2 cup grated cheddar cheese
  • 1 (6 ounce) tomato (minced)
  • 2 green onions, minced
  • FOR THE CHILI
  • 5 strips (5 ounces) bacon (diced)
  • 1 (8 ounce) yellow onion (diced)
  • 1 teaspoon chili powder
  • 2 cloves garlic, minced
  • 2 pounds venison (ground)
  • 2 whole (16 ounces) tomatoes (diced)
  • 3 whole diced (3 1/2 ounces) tomatillo
  • 1 cup beef stock

How to Make

  • Step 1: Add bacon first. Cook bacon then remove.

  • Step 2: Add the venison then cook.

  • Step 3: After the venison is cooked through, add garlic, onion and chili powder and sweat.

  • Step 4: Add tomato, tomatillo and stock, reduce by 1/4 amount and season with salt and pepper.

  • FOR SERVING

  • Step 5: Place 2 cups of venison chili in small cast iron skillet. Add the Fritos to cover top and sprinkle cheese on top.

  • Step 6: Place in oven to broil for 1 minute until cheese is bubbly. Top with minced tomato and green onion.
