  • 12 cups water (3 quarts)
  • 1 sprig parsley
  • 2 whole (16 ounces) yellow onions, sliced
  • 3 whole cored (18 ounces) tomatoes
  • 1 dried chile, crushed
  • 1 teaspoon salt

How to Make

  • Step 1: Soak the beans in 1 1/2 quarts water for 3 1/2 hours; drain and rinse.

  • Step 2: Place beans in large, heavy kettle, cover with 1 1/2 quarts water, add remaining ingredients and simmer, slowly, for 1 hour.

  • Step 3: Uncover and simmer for 1 additional hour.

  • Step 4: Serve hot.
