Ingredients

The ingredients are:
  • 1 1/2 cups beans (dried, anasazi beans)
  • 1 1/2 cup pinto beans (dried)
  • 10 cups water
  • 1 teaspoon salt
  • 13 ounces hominy, drained (1 pound, canned)
  • 3 green chiles (Anaheim chiles, or garnish)

How to Make

  • Step 1: Soak the beans overnight in water to cover.

  • Step 2: In the morning rinse the beans with cold water and place with fresh water to cover.

  • Step 3: Stir in the salt, cover and simmer slowly 5 hours

  • Step 4: Add water when necessary and stir

  • Step 5: Add hominy and simmer, covered, 1 hour, stirring occasionally.

  • Step 6: While the beans and hominy are cooking, roast, peel, seed and dice the chiles.

  • Step 7: Sprinkle on top of the cooked beans for garnish.
