Step 1: Soak the beans overnight in water to cover.
Step 2: In the morning rinse the beans with cold water and place with fresh water to cover.
Step 3: Stir in the salt, cover and simmer slowly 5 hours
Step 4: Add water when necessary and stir
Step 5: Add hominy and simmer, covered, 1 hour, stirring occasionally.
Step 6: While the beans and hominy are cooking, roast, peel, seed and dice the chiles.
Step 7: Sprinkle on top of the cooked beans for garnish.
