Ingredients

The ingredients are:
  • 1 large (2 3/4 to 3 pounds) cauliflower (broken into florets)
  • Olive oil
  • Kosher salt and freshly ground black pepper
  • CHEESE SAUCE
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • Garlic powder (small pinch)
  • 1/4 teaspoon mustard powder
  • 3/4 cup whole milk
  • 3/4 cup old (3 ounces) cheddar cheese, shredded
  • Salt and ground black pepper, to taste

How to Make

  • Step 1: Eat the oven to 425° F. Line a baking pan with foil and grease or spray with nonstick cooking spray.

  • Step 2: In a large bowl, toss the cauliflower florets with a generous amount of olive oil. Spread out in a single layer on the baking sheet. Sprinkle lightly with salt and pepper.

  • Step 3: Roast the cauliflower for 25 to 30 minutes, turning 2 to 3 times throughout the cooking.

  • Step 4: Meanwhile, make the sauce: in a saucepan, melt the butter over medium heat. Add the flour, garlic powder and mustard powder; cook, stirring constantly, for 2 minutes.

  • Step 5: Gradually whisk in the milk. Continue cooking and stirring until thickened. Add the cheese and continue cooking until the cheese has melted.

  • Step 6: Add salt and pepper, to taste.

  • Step 7: Remove the roasted cauliflower to a serving platter and drizzle with some of the cheese sauce. Put the remaining sauce in a small dish and serve along with the cauliflower.
