Step 1: Red clover flowers. Shake them to rid them of any insects or debris.
Step 2: Place the red clover flowers into a saucepan and pour in the water. Simmer for 5-10 minutes, with the saucepan lid on, stirring occasionally. Remove from heat, add the honey, and stir until dissolved.
Step 3: Leave to cool, and then strain through a fine sieve
Step 4: Add the fresh lemon juice to the liquid, and chill.
Step 5: Serve over ice.
