Step 1: In a mixing bowl, combine the flour, sugar, the baking powder and soda, and salt then mix well.
Step 2: In a separate bowl, combine sour cream with the egg, melted butter, lemon zest, and 2 tablespoons of lemon juice mix well. Add sour cream mixture into the dry ingredients mix until well moistened.
Step 3: Fill greased muffin cups about 2/3 full.
Step 4: Bake at 375 for 18 minutes.
