  • 1 pound boneless chicken breast (cooked and shredded)
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup yellow onion, minced
  • 1/2 green (6 ounce) bell pepper (seeded and minced)
  • 1/2 red (6 ounce) bell pepper (seeded and minced)
  • 1 jalapeno pepper (diced seeded)
  • 1 cup tomato juice (V-8 spicy)
  • 1 bay leaf
  • 1/2 teaspoon oregano
  • 1/4 teaspoon ground cumin (or to taste)
  • 1/4 teaspoon pepper, to taste
  • Tabasco sauce (dash)
  • 12 lettuce leaves

  • Step 1: Dice all the veggies into small squares, then fry in oil,
