Ingredients

The ingredients are:
  • 2 pounds pork loin roast (cut into small pieces save some fat)
  • 2 tablespoons oil
  • 5 dried red chiles
  • 1 cup water
  • 1 teaspoon oregano
  • 2 cloves garlic garlic

How to Make

  • Step 1: Wash chiles, removing stems and seeds. Place in blender with 1 cup water and blend into paste.

  • Step 2: Put pork fat into deep skillet until there is enough on the bottom of the skillet to prevent meat from sticking

  • Step 3: Add oil. Discard remaining fat.

  • Step 4: Brown pork lightly.

  • Step 5: Add the chile paste and mix well, adding water if mixture is too thick. Add oregano and garlic. Cover pan and simmer slowly for 1 hours.add water if needed if not tender cook longer
