Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 pound smoked sausage
  • 1 1/2 cups diced (12 ounces) yellow onions
  • 2 garlic cloves, minced
  • 2 cups chicken broth
  • 1 can (10 ounce) can tomatoes (Ro-tel tomatoes and green chilies, mild)
  • 1/2 cup milk
  • 2 tablespoons butter
  • 8 ounces dry penne pasta (they used a thick noodle like a bow tie)
  • 1/2 teaspoon pepper,
  • 1 cup Monterey jack cheese, shredded
  • 1/3 cup scallions, thinly sliced

How to Make

  • Step 1: Add olive oil to an oven-safe skillet over medium high heat until just smoking.

  • Step 2: Add sausage and onions

  • Step 3: And cook until lightly browned, about 4 minutes.

  • Step 4: Add garlic and cook until fragrant, about 30 seconds.

  • Step 6: Add broth, tomatoes, milk ,butter, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.

  • Step 7: Remove skillet from heat and stir in 1/2 cup cheese.

  • Step 8: Top with remaining cheese and sprinkle with scallions.

  • Step 9: Broil until cheese is melted, spotty brown, and bubbly.
