Ingredients

The ingredients are:
  • 6.1 ounces dry couscous (1 cup dry Israeli couscous)
  • 1 tablespoon olive oil
  • 1.13 to 2.29 ounces slivered almonds (1/4 to 1/2 cup natural)
  • 4 ounces yellow onion (finely sliced, 1/2 onion)
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1 cup water, hot
  • 1.34 to 2.68 ounces pitted dates (chopped, 1/4 to 1/2 cup)
  • 1.15 to 2.29 ounces dried apricots (chopped, 1/4 to 1/2 cup)

How to Make

  • Step 1: Put olive oil into a heated saucepan and then add the onion and almonds and cook till onions are soft and then put in the cumin, coriander and couscous and cook for about 5 minutes till slightly coloured.

  • Step 2: Add the water and bring to the boil and then turn down to a simmer and put on the lid and cook for 10 to 15 minutes until all the water has been absorbed.

  • Step 3: Stir and then add the dates and apricots.
