  • 2 chopped (16 ounces) yellow onions
  • 1 green chili (roasted, peeled and chopped hot)
  • 2 cloves garlic, chopped
  • 4 cups cubed pumpkin (peeled, seeded, unripe)
  • 4 cups water
  • 2 tablespoons oil

How to Make

  • Step 1: In a large kettle, saute onion and pumpkin or squash until the onion is translucent.

  • Step 2: Add corn, chili and garlic. Add enough fresh water to prevent sticking. Cover and simmer for 1/2 hour.
