Ingredients

The ingredients are:
  • 3 cups cubed pumpkin
  • 1 diced (8 ounce) yellow onion
  • 1 clove garlic
  • 1 chili pepper (hatch pepper, chopped ,optional)
  • 1 pound fresh green beans (snapped)
  • 1 can (15 ounce) corn kernels (drained)
  • 1 can (15 ounce) tomatoes
  • 5 slices (5 ounces) bacon

How to Make

  • Step 1: Fry the bacon, then crumble.

  • Step 2: Use fresh pumpkin (or any other squash), cut into bite size chunks. Saute in bacon grease with onion and some garlic (to taste) until onions are translucent.

  • Step 3: Add all other ingredients and cover - simmer until pumpkin is done.

  • Step 4: You can also put this in a crock pot, just cook it longer.
