Ingredients

The ingredients are:
  • 3/4 pound boneless skinless chicken breasts (cooked, around 3 breasts but you add more or less, I use grilled chicken for this it's the best flavor!)
  • 6 cups chopped romaine lettuce
  • 1 Roma diced (4 ounce) tomato
  • 3/4 cup corn kernels (very well drained if using canned, pat the kernels dry with a clean towel or use paper towels)
  • 3/4 cup black beans (canned, drained, very well rinsed)
  • 1/3 cup red onion, finely diced
  • 1/3 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1/3 cup ranch dressing (prepared)
  • 1/3 cup barbecue sauce
  • Salt and freshly ground black pepper, to taste
  • Tortilla strips, coarsely broken

How to Make

  • Step 1: Place romaine lettuce in a large bowl; top with cooked chicken, tomato, corn, beans, onion and cheeses.

  • Step 2: Pour Ranch dressing and BBQ sauce on top of the salad and gently toss to combine.

  • Step 3: Serve immediately, topped with tortilla strips.
