Ingredients

The ingredients are:
  • 1/2 cup rice (dry, brown)
  • 1 cup vegetable broth (stock)
  • 2 cups black beans (canned)
  • 3 tablespoons oil
  • 1 (8 ounce) yellow onion (diced)
  • 1 garlic clove
  • 1/2 (3 1/2 ounce) zucchini, diced
  • 1 large egg
  • 1/4 teaspoon pepper
  • 1/4 teaspoon salt
  • TOPPING
  • 1/2 cup spinach leaves (baby)
  • 1 (5 ounce) tomato, sliced
  • 1 tablespoon lime juice
  • 1 teaspoon hot sauce (drizzled on top)
  • Bread buns (eight)

How to Make

  • Step 1: Place the rice and beans in a pan with 1 cup stock and bring to the boil, bring it down to a simmer and place the lid on the pan. Cook until the water is all gone but before the rice burns to the bottom!

  • Step 2: Drain the rice and set aside.

  • Step 3: Fry the onion garlic and zucchini in a little oil until the onion is brown. Remove from the heat and place 2/3 of the mixture in a blender add 1/2 rice mixture and blend for a few seconds – no more. Place this back into the pan with the other mixture, add in rest of the rice, and mix thoroughly. Allow the mixture to sit and cool for 10 minutes.

  • Step 4: Add egg and seasoning; mix.

  • Step 5: Divide into 8 portions and shape into patties. Put in frig until cooled.

  • Step 6: Heat a little oil in a pan, and when hot, place 2 burgers into it. Fry for about 4-5 minutes on both sides, then remove from the pan.

  • Step 7: Repeat with all the other burgers until they’re all cooked.

  • Step 8: Grill buns.

  • Step 9: Top with burger spinach tomato drizzle lime juice and hot sauce on top.
