Ingredients

The ingredients are:
  • 2 tablespoons unsalted butter
  • 1 whole (12 ounce) yellow onion (diced)
  • 1 clove garlic, peeled and smashed
  • 2 tablespoons tomato paste
  • 1 1/2 cups tomato puree
  • 1/2 teaspoon mustard powder
  • 4 chipotles in adobo (roughly chopped)
  • 2 tablespoons red wine vinegar
  • 1 tablespoon worcestershire
  • Sea salt and pepper, to taste
  • 12 chicken wings (split, which makes 24 pieces)
  • 2 tablespoons oil
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper

How to Make

  • Step 1: In a medium-sized saucepan, add the butter, onion and garlic. Sweat until the onions are translucent, stirring often (two minutes or so).

  • Step 2: Add all remaining ingredients (except the salt and pepper) and simmer for 20 minutes. Transfer to a blender and process until smooth. Season to taste.

  • Step 3: For the wings, preheat barbecue to 350 degrees F.

  • Step 4: In a large bowl, toss the wings in the oil, salt and pepper to coat. Grill on the barbecue for 15 minutes, turning once, until cooked through. Brush liberally on both sides with the chipotle barbecue sauce and grill another 5 minutes to caramelize slightly. Serve immediately with extra sauce, if desired.
