Step 1: Heat oven to 350 F. Your oven rack should be set at center position.
Step 2: Line three cookie sheets with parchment paper.
Step 3: Blend sugar, oil and lemon juice with mixer. Add eggs, one at a time, beating well after each addition. Add baking soda, matzo flour and extracts. Fold in the chocolate chips and almonds.
Step 4: Form 3 (3-inch) logs. Place two logs spacing a fair distance apart on one cookie sheet and the remaining one on the second cookie sheet.
Step 5: Bake one cookie sheet at a time for about 45 minutes. Remove and, while still warm, slice logs in 3/4-inch slices. Put pieces cut-side up on sheets. Sprinkle with cinnamon-sugar. Bake 8 minutes or until golden.
Step 6: Bake the remaining cookie sheet.
