Ingredients

The ingredients are:
  • 1 1/2 to 2 cups granulated sugar
  • 3/4 cup oil (vegetable oil)
  • 1 teaspoon lemon juice
  • 4 large eggs
  • 2 teaspoons baking soda
  • 2 cups matzo flour (you can find this sold in the Jewish section of a grocery store, make sure it is for Passover use)
  • 3 to 4 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • Chocolate chips and slivered almonds to taste
  • Sugar (mixed with cinnamon)

How to Make

  • Step 1: Heat oven to 350 F. Your oven rack should be set at center position.

  • Step 2: Line three cookie sheets with parchment paper.

  • Step 3: Blend sugar, oil and lemon juice with mixer. Add eggs, one at a time, beating well after each addition. Add baking soda, matzo flour and extracts. Fold in the chocolate chips and almonds.

  • Step 4: Form 3 (3-inch) logs. Place two logs spacing a fair distance apart on one cookie sheet and the remaining one on the second cookie sheet.

  • Step 5: Bake one cookie sheet at a time for about 45 minutes. Remove and, while still warm, slice logs in 3/4-inch slices. Put pieces cut-side up on sheets. Sprinkle with cinnamon-sugar. Bake 8 minutes or until golden.

  • Step 6: Bake the remaining cookie sheet.
