Ingredients

  • 1/3 cup butter, softened
  • 1 cup granulated sugar (can use more)
  • 1 large egg (or use an extra large egg)
  • 1/3 cup low-fat buttermilk (or sour cream)
  • 2 teaspoons vanilla extract
  • 2 medium bananas (very ripe bananas, mashed about 1-1/2 cups)
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/8 to 1/4 teaspoon ground cloves
  • 1/8 to 1/4 teaspoon ground nutmeg
  • 1/2 to 3/4 cup walnuts, chopped (or 1/2 cup chocolate chips)

How to Make

  • Step 1: Preheat oven to 350 degrees F, thegrease an 8-inch baking pan (can use a 9-inch pan).

  • Step 2: In a medium bowl beat the butter with sugar until light (about 3 minutes)

  • Step 3: Add egg and beat until light and well blended (about 2 minutes).

  • Step 4: Beat in buttermilk and vanilla until smooth and blended.

  • Step 5: Mix in the mashed banana until just combined.

  • Step 6: In a small bowl combine the flour with next 5 dry ingredients; add to the creamed mixture using a wooden spoon or electric mixture on low speed mix until just blended (do not over mix).

  • Step 7: Transfer tho baking pan.

  • Step 8: Bake for 25-30 minutes or until cake tests done.
