Ingredients

The ingredients are:
  • 9 ounces sliced bacon (thick-sliced smoked bacon, small dice)
  • 1 medium shallot, minced
  • 1/2 cup red wine vinegar
  • 1 teaspoons packed light brown sugar
  • 1/2 teaspoon Dijon mustard
  • Kosher salt (pinch)
  • 1/4 teaspoon freshly ground black pepper
  • 2 pounds spinach (washed, stemmed, torn into bite-size pieces, and thoroughly dried)
  • 3/4 cup pecans (toasted, coarsely chopped)
  • 1 apple (chopped)
  • 1/4 cup crumbled feta cheese (or the bellavitano)

How to Make

  • Step 1: Heat a large frying pan over medium heat.

  • Step 2: Add the bacon and cook, stirring occasionally, until browned and crispy, about 4 minutes.

  • Step 3: Remove the bacon to a paper-towel-lined plate and set aside.

  • Step 4: Discard all but 3 tablespoons of the fat.

  • Step 5: Place the pan with the remaining bacon fat over medium heat, add the shallot, pecans and cook until fragrant, about 30 seconds.

  • Step 6: Whisk in the vinegar, brown sugar, and Dijon mustard; remove from heat and season with salt and pepper.

  • Step 7: Combine the spinach, reserved bacon,apples ,feta in a large bowl.

  • Step 8: Add the vinaigrette and toss to coat.

  • Step 9: Season with additional salt and pepper and serve immediately.
