Step 1: Heat a large frying pan over medium heat.
Step 2: Add the bacon and cook, stirring occasionally, until browned and crispy, about 4 minutes.
Step 3: Remove the bacon to a paper-towel-lined plate and set aside.
Step 4: Discard all but 3 tablespoons of the fat.
Step 5: Place the pan with the remaining bacon fat over medium heat, add the shallot, pecans and cook until fragrant, about 30 seconds.
Step 6: Whisk in the vinegar, brown sugar, and Dijon mustard; remove from heat and season with salt and pepper.
Step 7: Combine the spinach, reserved bacon,apples ,feta in a large bowl.
Step 8: Add the vinaigrette and toss to coat.
Step 9: Season with additional salt and pepper and serve immediately.
