  • 2 cups grated Parmesan cheese
  • 1 1/2 cups mayonnaise
  • 1 (8 ounce) yellow onion (chopped)
  • 12 ounces crab (drained)
  • 1 can (13 ounce) artichoke hearts (quartered, chopped)
  • 1/2 cup chopped fresh parsley
  • 2 tablespoons chopped fresh parsley
  • 8 slices (8 ounces) sourdough bread (3/4-inch)
  • 8 slices (5 ounces) tomato
  • 8 ounces Monterey Jack cheese (sliced)

How to Make

  • Step 1: In a bowl mix first 5 ingredients (cheese - artichokes) and 1/2 cup parsley and then transfer mixture to an 8 x 8 x 2 inch baking dish.

  • Step 2: Preheat oven to 400 degrees F. Bake crab mixture until bubbling and heated through (20-30 minutes).

  • Step 3: Preheat broiler.

  • Step 4: Place bread in a single layer on baking sheet. Divide hot crab mixture among the bread slices (about 1/2 cup each). Top with tomato slices and then the cheese slices.

  • Step 5: Broil sandwiches until cheese melts, watching carefully to avoid burning (2-5 minutes).

  • Step 6: Sprinkle with remaining 2 tablespoons parsley and serve.
