  • INGREDIENTS FOR BROWNIES
  • 2 cups almonds
  • 3/4 cup cacao powder
  • 240 grams whole dates (10 dates, soft, fresh - pitted)
  • 1/3 cup honey
  • 1 cup fresh mint (tightly packed full cup)
  • Salt (pinch)
  • INGREDIENTS FOR ICING
  • 2 ripe (12 ounces) avocados
  • 1/4 cup fresh mint (loosely packed leaves)
  • 1/2 cup honey
  • 1/4 cup cacao powder
  • 1/4 cup coconut oil
  • 2 teaspoons vanilla extract
  • Salt (pinch)

How to Make

  • Step 1: For the brownies:

  • Step 2: Combine the almonds and cacao powder in a food processor and process to a crumble.

  • Step 3: Add the dates, honey, mint and salt and combine until the mix comes together as a dough.

  • Step 4: Line a slice/baking tray with paper and press the mix evenly across the base.

  • Step 5: Place in the fridge while you make the icing.

  • Step 6: For the icing:

  • Step 7: Process all the ingredients in the food processor and blend until smooth.

  • Step 8: Spread over the brownies (it makes a thick layer) and pop back in the fridge to set.

  • Step 9: Cut into bars to serve.

  • Step 10: Store in an airtight container in the fridge.

  • Step 11: I have been told these freeze well, and if frozen leave them out for 10 minutes or so to soften before eating.
