Step 1: In a bowl blend the eggs and sugar together (do not beat).
Step 2: In another bowl dissolve the yeast in the water and mix with the milk. Combine with the egg/sugar mixture. Stir in the salt and flour. Beat well.
Step 3: Place in a warm place to rise until bubbly (45 minutes - one hour).
Step 4: Heat the shortening or oil (4 inches deep) in a pan to about 375 degrees F.
Step 5: Cut a corner in a plastic bag to make an opening 1/8 inch in diameter.
Step 6: Put about 1 cup of the batter into the bag and squeeze it through the opening into the hot fat, moving the bag in a continuous round to form a bird's nest shape (3-4 inches in diameter). Fry for one minute on each side using a slotted spoon or fork to turn). Remove form fat and drain on paper towels. Repeat for remainder of the batter.
Step 7: When cool, sift confectioners' sugar over the crullers.
