  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk (or 1 cup light cream)
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • FOR THE SOUFFLE
  • 1/4 cup chopped yellow onion
  • 1 tablespoon butter
  • 3 large eggs (separated)
  • 1 cup chopped spinach (cooked and drained)
  • 1/2 cup grated Parmesan cheese

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Start making the white sauce:Melt butter, stir in flour and heat until bubbly.

  • Step 3: Gradually add milk or cream, stirring constantly; cook 1-2 minutes.

  • Step 4: Season with salt and pepper.Let it cool down a bit.

  • Step 5: Saute onion in butter.

  • Step 6: Beat egg yolks until thick and lemon-colored.

  • Step 7: Stir into white sauce along with spinach and cheese.

  • Step 8: Fold in egg whites beaten until stiff peaks are formed; turn into greased 1 1/2 qt casserole.

  • Step 9: Set in pan of hot water and bake about 50 minutes.
