Ingredients

The ingredients are:
  • 3/4 cup dry rice (short grain white or Aborio rice)
  • 1/3 to 1/2 sugar (or more to taste)
  • 1/8 teaspoon salt
  • 2 cups 2% milk
  • 2 cups light cream (or use 4 cups half and half)
  • 1 can (14 ounce) evaporated milk (not sweetened condensed milk)
  • 2 teaspoons vanilla
  • 3 tablespoons cornstarch
  • 3 tablespoons water, cold

How to Make

  • Step 1: In a large heavy-bottomed saucepan cook the rice according to package directions (use a large enough saucepan to hold all the remaining ingredients).

  • Step 2: Add in sugar, salt, milk, half and half cream, evaporated milk and vanilla; mix well and bring to a light simmer.

  • Step 3: Reduce heat to low and continue to cook for 20 minutes.

  • Step 4: In a small bowl combine the cornstarch with 3 tablespoons cold water until smooth; add to the rice mixture and simmer for another 20 minutes longer.

  • Step 5: Best when eaten while still warm.
