Ingredients

The ingredients are:
  • 600 grams chicken drumsticks (4 drumsticks)
  • 750 grams chicken thighs (4 bone in skin on thighs)
  • 1 tablespoon cornflour
  • 1 tablespoon water
  • 50 grams granulated sugar
  • 1/2 cup soy sauce
  • 1/4 cup mirin
  • 1 clove garlic (minced)
  • 1/2 teaspoon grated ginger (fresh or jar)
  • Pinch black pepper
  • Sesame seeds (optional to serve)

How to Make

  • Step 1: Preheat oven to 220C degrees (or 200C fan forced)

  • Step 2: Mix together to cornflour and water and then combine all ingredients except chicken and sesame seeds in a small saucepan, simmer over medium low heat, stirring, until thickened and bubbly.

  • Step 3: Place the chicken drumsticks and thighs in a roasting pan (I line the baking pan with baking paper) and brush them with the marinade, turn the chicken and brush again.

  • Step 4: Bake 25 minutes, turn thighs and bake another 20 to 30 minutes until cooked through, basting/brushing every 10 minutes with the marinade during cooking.
