Ingredients

The ingredients are:
  • 3/4 pound potatoes (yellow new potatoes - about 8)
  • 1 teaspoon Smart Balance spread (the light one, or any other light tub margarine)
  • 3 tablespoons fat-free milk
  • 1/2 cup fat-free sour cream (or reduced-fat sour cream)
  • 2 tablespoons chopped bacon (pieces or bits, can also use regular bacon)
  • 1 tablespoon chopped fresh chives (or green onions)
  • Salt and pepper

How to Make

  • Step 1: Microwave potatoes until fork tender (or steam, boil or bake).

  • Step 2: With a masher (or large fork, if you do not have one), smash potatoes a little (I leave the skins on, but feel free to remove them, if desired). Add light butter, and smash a little more. Be careful not to overmix, or potatoes will become glue-y.

  • Step 3: Add milk and stir or mash into potatoes. Stir in sour cream, bacon pieces and chives. Add salt and pepper to taste.

  • Step 4: Rewarm for about 45 seconds in the microwave and serve.
