Step 1: Using a strainer over a large measuring cup, drain pineapple, reserving syrup. Add enough water to make 2 cups of liquid.
Step 2: Heat the liquid to boiling and stir in gelatin until it dissolves.
Step 3: In a large bowl, beat cottage cheese with mayonnaise at high speed until well blended.
Step 4: Reduce mixer to low speed and beat in pineapple, gelatin mixture and nuts.
Step 5: Pour into a bowl or mold.
Step 6: Refrigerate until set.
Step 7: Unmold before serving.
