  • 1 package (6 ounce) lime gelatin
  • 1/4 teaspoon salt
  • 1 1/3 cup creamed cottage cheese
  • 1/2 cup mayonnaise
  • 1/2 cup chopped nuts (optional)

How to Make

  • Step 1: Using a strainer over a large measuring cup, drain pineapple, reserving syrup. Add enough water to make 2 cups of liquid.

  • Step 2: Heat the liquid to boiling and stir in gelatin until it dissolves.

  • Step 3: In a large bowl, beat cottage cheese with mayonnaise at high speed until well blended.

  • Step 4: Reduce mixer to low speed and beat in pineapple, gelatin mixture and nuts.

  • Step 5: Pour into a bowl or mold.

  • Step 6: Refrigerate until set.

  • Step 7: Unmold before serving.
